Wife was out of the house today so I whipped up some elk meatballs which turned out great. May seem crazy but its my favorite meal to make out of elk. Kept it simple, cooked them up in olive oil and then put them in the pasta sauce and let them simmer for another hour. Added a ton of onions, yellow peppers,orange peppers and a ton of garlic to the pasta sauce. Elk season needs to get here because I'm almost out of elk meat.

Looks good! I know the feeling, my wife, daughter and i have eaten both my deer from last year, and all of my elk except for about 15lbs of burger and 1 roast!
