hard to find done correctly around here though, but maaaan I had some good ones in Hawaii - good enough to bring me back!


I bet mountain whitefish in january would be good too, hmmm

ok, here it is!
this has become the favorite meal at elk camp. your supposed to make a tomatillo salsa with it but its a real pita, the pico de gallo is just as good and way less time consuming if bought already made.

ingridents:
fish (salmon, steelhead, halibut, whatever but its awesome with salmon.)cut into strips of desired thickness (3/4 to 1"x 4ish")
flour
beer (to drink and for the batter)
mustard
shredded cabbage
small corn tortillas
smoked adobo chipotle peppers (in a can in the Hispanic section)
mayo
milk
pico de gallo
cooking oil
shredded mexican cheese(optional)
lime (optional but recommended)
johnnys alaskan salmon seasoning(optional but recommended)

batter:
-mix 2 cups flour with enough beer to make it a pancake batter consistency ( you can add more or less depending on desired thickness of batter, but it is a very light batter)
-add a shot of mustard
-mix well

chipotle mayo:
-mix 1/2-1 cup mayo with 2 chipolte peppers and mix thoroughly
-add a shot of milk (just a little to slightly thin the mayo) and mix again

frying fish:
-1/2ish" oil in non-stick frying pan (hot but not smoking)
-dip fish in batter and place in hot oil
-cook until golden brown on both sides, remove from oil and place on paper towels, sprinkle with the johnnys

putting it all together:
-spread a thin layer of the chipolte mayo on a tortilla, add fish, cabbage, and pico de gallo, squeeze lime wedge over top and add cheese if you like.
-eat until you have to pop the top!
