The update for play pin salmon. I cold smoked for about 7hrs then hot smoked it @ 180 till the I T was 140. Flavorful and moist
. Just having a hard time getting a more prominate lemon flavor. Other than that
.

Is this the batch that had halibut in it? I was curious to see how it turned out, never had much luck smoking halibut

Yes it was. Halibut was okay, took on more salt than I'd like. Other than that it was good

How long did you smoke it for? It doesn't look like it took on much smoke.

It was cold smoked @ 60 degrees for 7/8 hrs. Hot smoked @ 180 degrees till the internal temp was at 140. btw theres a few packages that have halibut an ling.
