Lard

So how many of you folks have rendered any lard off of your deer? I just got done experimenting with a cup and it's AWESOME! I used it to grease a pizza stone and it's one of the best crusts I've had in a long time. If you wanna give it a try take some of the really thick, tough fat and cube it. Put it in a pot and set your stove to warm until it's all melted down and you're left with some delicious craclkin's! Let the lard cool in whatever dish you plan to store it and use it in place of butter or oil in your recipes!

So is pork fat! That's why you render it and make LARD! Lard's not or everyone, but my taste-buds beg to differ!

I trim as much of that nasty stuff off of all my wild game before cutting it up. Pork or beef fat is the way to go IMO.

First I have heard of anyone liking it. Pork fat has only the slightest if any flavor IMHO. When I have inadvertently tasted deer fat...

Alright...when I rendered the fat I told my wife I was probably the only dude within two hundred miles with deer lard in his fridge. She said, "come on honey, you know some red neck in Rockport has a fridge full!" I bet her that no one on HuntWA rendered their deer fat. So Im glad to be in the minority here...

I haven't had enough fat on one to do much for a few years. Rendering it does, I think, remove some of the strong flavor. For someone that wants to try it, be sure to not use too high of heat, you don't want it to burn.
I do like pie crusts with lard more than shortening, might try this sometime, I'm up for a lot of weird stuff. Even ate an inchworm that was in the garden broccoli (cooked) last night.
