Smoked black cod

We were fortunate enough to get into some black cod last weekend while halibut fishing out of westport. I've been told it smokes up amazing and now that I have a good amount I'd like to try it out... anyone have a recipe they'd be willing to share? Its extremely oily and tender fish, I could see it becoming mushy if done incorrectly.

I have some in the freezer. It is a soft fish. I will follow along and see about some other cooking ideas. I have only grilled it with olive oil salt/pepper.

I did that last night, along with a teriyaki marinade recipe I found online. The teriyaki went really good with it I liked it a lot.

In the past all I've really done is fry it.

From my experience most white meat fish need to be brined prior to smoking it or it will get rubbery if that is your game plan. There are a lot of brine recipes on line but the salt does something to the fish and it is flakey and good if done right. Have not smoked and cod for years so I cant give you any amounts of salt to water.

I used to smoke it a lot for my Father I would give it a Heavy coat of rocksalt for an hour and a half rinse and set out on the counter to dry for a few hours then smoke it for about 3-4 hours med temps 150-160 degrees dad would boil it when he got it and eat it with red potatoes I used Alder for smoke I think he boiled it to remove some of the oil

As an oily fish, you should not leave the smoker unattended, and/or move it away from structures.  FIL had a renter who caught their rental house on fire by letting it smoke unattended while he slept.  It caught the deck and kitchen on fire before they were able to put it out.
