Ate the tenderloins tonight. They were delicious!

Also used some the lard to saute some squash. It was also good. A little odd its not solid at room temp though!
:tup: will try that some time never ate just regular bear meat.
only sausage and one roast always wanted a bear steak.

I always trim the fat and render it down for lard.  I use it to make pie crust and other baking projects.

I only trim some of the fat. Never noticed any funk. I cut my bears up in to steaks and roasts and had one ham done this year. This years bear was a little tough but flavor is great!  I've never stored it long though. Its normally all eaten up buy may or june

The backstrap makes great steaks.  When I was a kid, we had a bunch of bear processed (corned maybe?) into thin sliced sandwich meat like chipped beef.  My brother and I would eat it right out of the freezer, yu-um.

Tried another recipe today. Bear biscuits and gravy! Also really good.

I used the bear lard in the biscuits. Then found a breakfast sausage recipe from Alton Brown for breakfast sausage. I did leave out the brown sugar because I thought it would balance out the spice. I like spicy biscuits and gravy. It was surprisingly good. The bear was just fatty enough and did well with the spice. I would recommend it.
