Pontoon is my vote.  I fly fish and it is great for all the rivers I fish.  Stable, easy to control and set up your drift, and you can carry a fair amount of gear.

Could you carry enough gear for an over night stay?

That depends on the pontoon you get and how much gear you want to haul. But it can easily be done.
And I vote pontoon, hands down.

Yes, check out fish cats.  Some come with a metal frame to load gear on.  Usually mine is carrying a cooler full of beer, but you can strap a little camping gear on there.  Easier if you go with a buddy.  Then you can split loads.

Pontoon is far more versatile, stable, and comfortable.  For river fishing the ability to pull up to the bank and step out not having to worry about tipping is a huge plus.  For lake fishing being able to kick with fins and fish while being able to take your feet out of coldwater is nice.  All around pontoons get my vote and if you really want to pack gear there are all kinds of size options.  I prefer 8' but have had 9' and 10', had several bucks bags but I don't think they are the same quality they used to be.  I highly recommend looking at outcast boats.
