July 1st Pig Roast
« on: July 04, 2016, 08:30:55 PM »
I wanted to share some photos of our July 1st pig roast. The pig was 75 lbs and fed 50 guests.  I was able to build the spit for 100.00. I had a buddy purchase the pig from Farmer George in Port Orchard (great guys, this is the second one we have purchased from them). I kept the temp at 225 - 265 for the duration of the roast, used a homemade dry rub and stuffed the belly full of pineapple and apples. I used Broadleaf Maple and Applewood for the smoke. It turned out awesome!

Did you rotate constantly,  or just turn it every now and then? Looks like a good set up! Good looking Airedale, my Dad used to have one.

I rotated the pig 180 ° every 30 mins. I never rotate the pig a whole 360. I try to keep the juice from the fruit in the cavity of the pig. Also the thickest part of the meat is higher on the back. I have not had an issue with cooking it completely either so I see no point in changing my process.

Ella is a great dog. This is my first airedale, but I will have many more in the future.
