Treager on smoke setting for 30-40 minutes only.Tuna takes smoke very quickly and too much before you can it comes out bitter tasting.Smoke the loin whole, then cut into jar sized pieces. Add 1/8 teaspoon salt to each half pint and you have smoked tuna heaven.I personally don't care for the taste of liquid smoke.
How many pounds and minutes do you guys pressure cook it for? I haven't canned tuna in 5 years and I think I remember 11 #'s for 110 minutes, does that sound right?

ET
