breasting out has been the problem. There's more to a bird than that. My favorite fried piece is the leg seasoned and floured.Hear this all the time. One time I made 26 mallard legs in one pot braised.
Put it on a cedar plank and chop it into fine pieces . Scrape the duck off into the garbage and eat the plank........
