I didn't make this, but I watched it being made, and loved it...

Cut bear meat into 1" cubes, shake in flour seasoned with salt, pepper, garlic, and cayenne pepper.  Get cast iron skillet good and hot, and sear cubes, then remove from heat.  Put in crock pot for 3 hours on high with a can of beer.  After 3 hours add potatoes, carrots, and any other veggies you want and one can of crushed pineapple.  Cook until potatoes are tender.

I suppose this would work well with any game meat, but the pineapple really made it all come together.

You had me until the pineapple.  I cannot stand pineapple.

Wonder if mango would be as good.  I would think so as it should have similar enzymes as pineapple to help break down the muscle proteins.

No. No it's not as good. Pineapple kicks booty.

I suppose mango would work, it was the whole, sweet and spicy thing, but I would think the mango would be much sweeter and much stronger of a flavor than the pineapple, depending on the amount used.

Every couple of months I take all the misc meat in my kitchen freezer and cook it up.  This could be stew or steak, leftover birds breast, bear, deer beef or pork.  I will cube everything up, season with salt, pepper, onion, and garlic.  Throw in some mushrooms, capers, and bacon bits, and brown it up in a saute pan with lime juice, olive oil, red wine.  I usually throw it onto some paper to help absorb the extra oil.  Kids love it.  Basically it's like big fondu cook-off without all the sauces and keeps all the old meat from going to waste.  Everyone gets a fork, baked potato or rice, and some veggies.
Dreams are forever on the mind, realization in the hands.
