So had a pizza party. So cured up some pepperoni (80% beef, 20% Berkshire hog) took about 3.5 weeks to cure. Also cured some salami (100% Berkshire hog). Then cured some Canadian bacon, which only takes a few days. Also threw together some fennel sausage. Then got the pizza oven roaring. Overall pretty well made pizza.
Traded some salmon for Chanterelles, so I threw some of those on the pizza too. Next day had risotto. It was a good weekend. Even though I got rained on all weekend while bird hunting.
