Weight loss for pepperoni?

If you have 40 pounds wet then smoke it how much do you lose in weight if anything? Just got some stuff back from the butcher and was shy 7 pounds for what I got charged for

you should expect some water and oil loss.

That sounds about right.  I make 20# batches of Snack Sticks and wrap in 2# packages.  Normally end up with 7-8 packages.
