canning tuna tonight

local fred meyer had fresh tuna loins at $5.99/ lb.  wife went in and bought 25 lbs and had them trim it up--ended up with 23 1/2 lbs.  i trimmed off the loins a little bit more today and put them in 1/2 pint jars...added a 1/2 tsp sea salt and a pinch of pepper to each jar, put in a touch of water to make about 1/2" of headspace and put them in the pressure cooker at 10 lbs for 100 minutes...working on the last batch now...53 1/2 pints takes a little time to process...ran out of beer once so the wife had to head up to the store to reboot.  do luv me some homemade tuna...yummy

Yum!

I was given 20 lps of Albacore a couple years ago from my sister in Newport, OR.
I smoked up about 10 lbs.  Man I could not think of a better cheese and cracker combination as smoked albacore!
Matched with Cougar Gold (I know, sacrilege, but I love Cougar Gold) and a Ritz, my wife prefered Triscuits, the smoked albacore was amazing.

Tuna, would smoke up great!

Smoke belly meat,  put just a little in the bottom,  slice of jalepeno and pinch of salt... no oil or water added.... game changer

I have a superintendent that used a similar recipe and it was awesome.
