Yeah, that.

Usually the vein comes off with the tail.  That and they don’t spend their life in the bottom of a sludge tank in Thailand.

I never do anything more with local spots.

Cooked up a bunch tonight. I did the pre boil as usual, but used the meat shears down the back tonight. That’s definitely the way to go. I went all the way down and cut off the tail. Just roll them out. It split the back open on most and I could wash the vein out also.

Had all the kids home today for surf n turf.

I did up a 10 pound bag of prawns - did them up chili garlic style.

There is steak in the fridge for sandwiches tomorrow, but the prawns didn't last.
