So got a ton of white chanterelles and needed to cook a bunch here was two of my favorite meals.
Roasted Mushroom Soup. Kinda like cream of mushroom but not at all like cream of mushroom that you get from a can. Roasted potatoes (from the garden) shallots and garlic, chanterelles, then reduced with some Gruner Veltliner (from the folks vineyard) and then cooked in some pheasant stock. Blended. Then added some cheese, homemade bread and some brandied chanterelles.
Then did a chanterelle brown butter gnocchi, confit pheasant and a poached egg. Shredded most of the leg meat and tossed with the gnocchi, however left a few to make an obnoxious garnish. Ha. Just a reminder that what you eat was once alive. Probably should appreciate it.
