One of the early foods enjoyed by Colonists and Mountain Men alike was Corn Meal Mush.
The newcomers learned to make and eat this from the Native Americans who had been grinding Corn for centuries and making all kinds of Dishes.
Mush made from cornmeal became the usual Breakfast and Supper go to dish.
Folks served it with butter, milk, or meat drippings. (Mush with Drippings was the ancestor of today's Grits with Red Eye or Sausage Gravy.
When I was a kid my Dad would slice up and fry his favorite Breakfast Dish...."Thick" Corn Meal Mush (that had cooled overnight in the Fridge) served with Butter and Maple Syrup...He sure loved his Fried Cornmeal Mush!

A Simple Old Recipe for Cornmeal Mush:"Boil 1 cup of cornmeal and a little salt in 4 cups of water. Stir often until thickened (about half hour)." Pour into a Meatloaf Pan and refrigerate. When firm, cut off 1/4th inch thick slices and fry in Bacon Grease until browned. Serve with butter and your favorite topping.
