Going to put him in the smoker on Sunday so any advice would be great. I left home at 630 and saw 3 elk just outside if Cheney. Then when I arrived at my area I spotted a moose. And there was a flock of turkey on some land that I've been denied to hunt the last two years.   I took the two mile hike into the area that I got my 07 bird a received a gobble after the first call. I got set up but after a half hour I knew something wasn't right. I looked over the edge of the canyon thinking he was hung up on one of the rock bluffs when he gobbled again and I realized he was on the other side of the river. Probably the same Tom that I had seen in the morning. I went back to the truck and was planning on going to another area altogether but then I decided to ask for permission again. I figured he would say no but after I told him about my morning he said to go for it.  I called at every canyon for about a mile hoping he would give away his location but he wouldn't say anything. I walked up to another draw and was about to call when a flock of turkey started moving 30 feet from me. I zoned in on one with a blue head and shoved my call and striker into my pockets. He was just walking slowly away so I looked through my bino's for a beard. He turned a little and showed off a nice one so up went the gun. He dropped in his tracks at 40yds. 8.5 inch beard and 1 inch spurs.

i use hi mtn seasons poultry brine and i inject the breast legs and thighs with the brine it turns out great i leave it in the brine for 24 hours good luck and good job

Lots of good recipes, this is one that has done me well:

Cut breasts into 3/4" steaks, marinate in apple juice, 1/4c. olive oil, slices of fresh ginger and garlic.  Grill.  Legs, thighs and everything else into crock pot on low for 24 hrs.  Pick out bones, tendons, etc., add 1 full bottle BBQ sauce, another 24 hrs.  Serve on rolls, if you can tell from BBQ beef, you're better than me!
As long as we have the habitat, we can argue forever about who gets to kill what and when.  No habitat = no game.

Shoot-em-dead: Great bird. I took one on Friday morning. I have a great recipe in my cookbook (available for free download at www.outfittersservices.com) for a roasted stuffed Turkey.

However you can smoke him just as easily. My strong advice is to brine the bird for 24 hours before cooking, regardless of the method. This makes the bird jucy, tender, and flavorful. My brine recipe is in the book as well. If you want a hard copy just let me know. dave@outfittersservices.com
