Miss Potatoes? Roast radishes and yams

Roasting radishes and yam chunks with olive oil and seasonings, then covered with pork rind crumbs is an excellent Keto substitute for roasted potatoes. 400F for 45 minutes does the trick.

Is this one of those recipes where the last line says, "Then throw away the radishes and yam chunks and eat the pork rind"? Sounds delish. :chuckle:

I'm on a beet kick...red or the gold beets.  Cut up, add butter and garluc, 350 for about 90 minutes.  So good.

:chuckle: They're actually pretty tasty and after cooking, don't have the heat of raw.

I had never really eaten beets until recently, turns out I love them. Lemon juice and coarse sea salt go well on them. Was not aware they turned your whiz red and got quite the fright the first time I ate em :yike:

I was skeptical of roasted radishes, but they really are good.
