No sir, not me.  For over 6 decades, I have only eaten ungulates, not meat eaters…that’s just me.

You guys are too funny, thanks for all the replies. I have heard they are good eating and cougar too. If anyone has any good recipes or techniques I would love to hear about them.  Norman89, your recipe sounds delicious, and no you are not weird I think I would get into trapping for the meat as well, which Is why I want to try some beaver before I invest in all the equipment and time.

these guys are all missing out. We cut up every beaver we catch. Typically debone it and grind it all at the end of the season. We have fed it to a lot of friends and not one of them could tell you a bad thing about it. I will can some at the end of the season as well. Perfect for that

bobcat backstrap is kind of fine, not terrible
take the hind quarters and throw them in the instapot with your favorite BBQ sauce and some beef stock, fall apart tender delicious.

Grew up in Carson, an ol boy from the South owned the gas station there at the time.  He gave me $5 worth of gas for every beaver carcass I brought him.  Was 15 gallons of gas back then in 70’s.

I keep the hind legs and back straps for salami. Usually make about 25 to 50 pounds a year. every person i have given it to has liked it. Why throw away good meat?
I use the front legs and the rest of the carcass for bobcat bait.
Have eaten bobcat also and liked it.
I enjoy having lots of different stuff to eat.
That why i have the nickname of uncle beaver :chuckle:
