Eating beaver is pretty popular in NW Pennsylvania. I ate it as a youngster. Always seems to be described as similar to beef roast. I'd 100% recommend trappers giving a slice of beaver a try. I believe we baked beaver in a roasting pot. Some of the recipes listed here sound pretty good too!
I felt like a one legged cat trying to bury a terd on a frozen pond!
