Spring Meals.

Springer, Morels, Asparagus, Peas and Gnocchi.

Started dry brining the salmon overnight. It seems like it limits the albumin push out that happens. I cooked the hell out of this (probably 1-2 min too long). And it's just starting to push the albumin out.

We pickled 40 lbs of asparagus so had lots of asparagus that wasn't great jarring size.

As for the morels, we had probably 3-4 lbs kept some to pan fry, kept a few for a fresh meal and dehydrated the rest. This was the fresh meal they ended up in. I swear most ended up under each salmon cause I used almost of lb of them and you can barely see any in the photo. Oh well.
