Looking for italian sausage recipe

Looking for an italian sausage recipe. Probably a spicy Italian. Plan to make links like braut sized. I have 9 lbs of ground deer. So prob a 20 lb batch and replace the 11 lbs with pork. Or do 15lbs with 9 venison and 6 pork. Whichever is recommended. Is a packet easier or does someone have a great recipe. Id also like to make some bulk breakfast sausage and can make patties or put in gravy when i grind the next batch.  so up to both idea. Time to get everything ground up and made in prep for the fall

Have not tried any of the Italian styles but I get all my breakfast sausage seasonings and pepperoni stick seasonings from Spokane spice company. I usually make 100-150 pounds of pep stick a year and 50 pounds of breakfast sausage and it’s always good.

Thanks. Is that different than mitchlitch?  Is it a premade package,  whats your pork to wild game %, and what amount in lbs does a package make

PS Seaoning has a good Italian blend that i have used with pork sausage.  I wanted more heat in 1 batch so I added some red pepper flakes.

I used AC Legg mild Italian with some elk last winter and it turned out great. I just did elk and pork fat (eye balled the fat ratio), left it as bulk to add to pasta and it turned out great.

It is mitchlitch. Most of the batches I do are 25 pound batches. Seasonings come in a pre made bag for 25 pounds. They do have some smaller batch sizes I believe. For 25 pounds I use 17 pounds of game and 8 pounds of pork. I even us that ratio when doing duck/goose.

There is a recipe on here someone posted up. I used it before and it was good. I’ll see if I can dig it up
