Favorite Sturgeon Recipes

Please post your favorite sturgeon recipes here. I met a guy who insisted that the best way was to boil it in 7-up until it floats and then dip in butter, he said it tasted like lobster??? I'm going to try it.

I prefer 2 cups sugar.1 Cup salt.2 quarts of water simmer till dissolved.Bring to slow boil
Cut sturgeon into 1/4" thick slices.Drop in boiling water till it floats.About a minute.
Then dip in garlic butter.

I always cooked Sturgeon like I do salmon.
Place Filet on top pf aluminum foil
cover with miracle whip, lemon pepper, johnny's seasoning salt, green onion, slices of lemon
Pinch foil at the top so partially covered and traps juices in
barbecue until not quite done
being careful with sturgeon not to over cook.   Sturgeon can get tough as it is easy to over cook.
Best when cooked to a few minutes from done
Cooking time can vary dramatically based on the size and thickness of filet, so just keep an eye on it.

A lil beer batter with some cabelas honey pecan flavoring I deep fry them

Smoke it. i make my brine a little sweeter than i do with salmon. make sure you dry completely and then brush outside with honey and black pepper and try to cut back a little on the smoke it really takes the flavor. you could sell this stuff as candy.

Ive never cooked it but the best way ive ever eaten it was smoked! that was some good stuff! :drool:

use that lousinia fish fry coating and deep  fry. I swear you can't tell the diffrence from halibut.

my favorite recipe is the first one I'll try since I've never had it before and only recently my friends are telling me it is the best stuff ever

I've tried the "poor mans lobster", grilling, and bacon wrapped (pic below, sorry about plastic wrap with condensation, I was too lazy to remove it). I'm going to give deep frying a shot next. I've already had some smoked and really liked it. So far I rank the prep methods as follows:
1) Bacon wrapped (winner by far)
2) Smoked
3) Grilled
4) Boiled in 7-up (poor man's lobster)

marinate in buttermilk over night. beer batter them and drop them in the fryer. sprinkle with cajun seasoning. mmmmm good
Some animals WERE harmed in the making of this Hunter. They were also dragged through the dirt, butchered and tasted delicious fried with butter and bacon.

I wasn't a big fan of the poor mans lobster. I ended up cubing it, battering, then into some oil. It was pretty good. Not a huge fan of the texture compared to other white fish though. I think I will try smoking the remainder of the sturg I have left. I had canned stug a long time ago and it was pretty good too.
