I got to disagree about the moose. The one I shot is tough as heck. I believe it tastes very similar to deer. The little three point elk I shot is the best tasting animal I have ever shot. No gamey flavor and tender. I suppose if I shot a young tender moose my feelings might be different... I've had all the rest but cougar, and I'll eat them all.

I've tasted everything listed and do have to say that Mountain Lion is probably the best. I've liked everything listed and would eat any of them again. I did eat one ewe bighorn that was not very damn good. But then again I have also had elk, deer, caribou and moose and antelope that wasn't all that tasty as well. I've eaten Lion from probably 6-7 different kills and it was good every time.

I went with Elk. Love a shoulder roast, back straps. Um UM good. Mix in some pork fat for a mean sausage.
Wild boar is my next fav.

Never saw the boar, not even sure about the origin either. I had it on a trip to Montana. The story behind it is that it was ferrel pig taken on a ranch, sorta damage control i guess. Anywho it was tasty, made pulled pork, burgers, and a chop or two.

Just had some sirloin tip moose steaks...still tough to beat.
Headed to AZ for a hunt this week. On the menu Thursday is elk kabobs, Friday is moose burgers, Saturday is antelope backstrap, and Sunday...well, hopefully by then we'll be eating deer ribs. All cooked over mesquite. I'll give a report on the night by night comparison when I return.

I gotta admit, I'm a little surprised at all the Moose voters. I shot a Moose last year up in Alberta and it pretty much sucks. Totally disappointed in it.
My vote would go to Elk.....but I was one that voted other. That's only because going back to Africa this last October I ate Gemsbok (Oryx) just about every way you could and could not get enough. Can't even discribe how fuggin' good that meat is. I wish I could've brought some back.

In 1974 four of us went to Alberta, my friend got a paddle bull and I got a 51 incher, we split the meat 4 ways, the little one was good eaten, the big one even the stew meat was hard to eat, strong and tough. Since then I've shared 4 moose, all big ones and they have been very good, tender and very little wild flavor. I voted moose.

Idabooner, I had the same experience, A buddy and I killed 4 caribou out of Mulchatna. 3 were great 1 was HORRIBLE. Its hard to say if whats best if someone only tried 1 critter.
