I visited relatives in England, my Aunt knows I am a hunter so purchased a 10lb fallow buck loin roast for me to cook one evening (like a bone-in prime rib roast).  I cut the loin from the bone, marinated in a pear juice and cabernet stock.  Seared the marinated roast with fresh garlic, ginger, salt pepper and olive oil, the  tied it to the bone and dry roasted it in a covered roaster at 250F for 6 hours.  Came out medium rare, there were no complaints or leftovers.

This was a free-ranging/high fence, never pursued, acclimated adult buck.  Don't know how it was killed, or how long it hung after.  Compared to US deer and elk, it was fatter (didn't trim off the fat, and it wasn't tallowy like wild game, more like pork), more tender, and more mildly flavored IMHO.
As long as we have the habitat, we can argue forever about who gets to kill what and when.  No habitat = no game.

That sounds really good doublelung....

What I really enjoyed was doe fallow, it was tender and delicious, not strong at all. Also had some larger buck steaks, they were tougher and naturally a little stronger, but still tasted good. We were in hunting camp overseas and we just fried it with some basic seasoning, didn't take time to do anything fancy. I shot another doe on another trip just for some camp meat and it was good too...  :)
