Grind, Stuff, Smoke…..Repeat 2X

Been a long weekend between the kids soccer, checking trail cams and making sausage. But the end is in sight. A couple more hours and the pepperoni will be finished smoking and I can package it tomorrow. I didn't get to smoking cheese this weekend, but maybe one night after work.

30 lbs of Summer Sausage
Hi Mountain Summer Sausage kit with some additions. I added 1lb of hi-temp cheddar, 1lb of hi-temp mozzarella and 1lb of soy protein concentrate and a few TBS of liquid smoke. The meat mixture was 24lbs venison and 6lbs pork butt. This was stuffed into both 2.5x20” and 1.5x12” mahogany fibrous casings.






25 lbs of Pepperoni
Cabela’s Pepperoni Snack Stick kit with 5lbs pork butt and 25lbs of elk meat stuffed into 18mm collagen (mahogany) casings.






20 lbs Breakfast Sausage
Hi Mountain’s Original Mountain Man Blend spices with 50/50 pork butt and elk stuffed into 21mm collagen casings. I meant to add some liquid smoke, but got too busy and didn’t remember until all the stuffing was done. The packages ended up at 1.25 – 1.50 lbs each.

that looks delicious. very nice job on casing. I've only done it once and it didnt come out looking like that!!!

Looks real good going to be doing the same soon I am going to start making some for hunting Jerking, Pep and I can not forget the sumer sauage for my girl that go's with her old fat dad hunting.

Thanks for the compliment. Yea, it is a bit of work that is for sure. Those packages are actually breakfast sausage, though I will do the same with the finished pepperoni.

I place some marks on a cutting board for the length that fits a quart sized vacuum bag and cut all to length. Here is an older pic of method.

Too much! I have been eating sausage for a week before this and I am about tore up inside. :yike:
Made 15 lbs of Polish sausage with cheese last week.

Wow looks like that new stuffing attachment is doing a great job sure is cranking out some great looking sausages nice job
