Grouse Recipes
« on: August 31, 2010, 09:27:26 PM »
Ok, seeing as there will be a number of folks out tomorrow looking for dinner, how about some favorite grouse recipes?

Slow cooker? Saute? Let's hear 'em.

Saute in butter (sometimes dredged in flour), a little garlic seasoning, cream of mushroom soup, and chanterelles over rice or noodles. Pretty basic camp food.  :chuckle:

Sautee to brown the edges, then let simmer with some butter, wine and a bit of garlic. Once softened, place next to some chicken rice-a-roni with chantrelles. Yum.

Saute in butter. Remove, saute potatoes and onions. Sprinkle with lawrys seasoning salt. Mix it all together. Then go shoot more. WooHoo!!!!!!  I plan on eating this in camp this weekend.  Very easy but tasty and filling.

Must be a newlywed....

OK, here goes....

Choose a good bottle of of Merlot. Uncork and let stand. After you've cubed your grouse breasts and pulled all other meat from two or three grouse, trim the fat. Coat the bottom of a skillet with a little butter. Simmer the meat in the butter but drain butter as the grouse browns on the edges. Cookdown, drain. Pour in an ounce or so of wine as by now you will have poured yourself a class. Simmer on really low heat as you cook the pasta from a box of Chicken Fetucini mix. Don't quite go by the directions of your chosen Chicken Helper. The directions will say to mix milk and the packet over the noodles in a skillet. Instead, warm the packet and milk in a sauce pan as if you're making gravy. Drain and serve the noodles on dinner plates, salt to taste. Drain the meat then top the noodles with the meat. Pour the gravy over the top of the meat and noodles topped with fine ground garlic to taste.

Pour a couple glasses of wine or your favorite malt liquer. (don't ruin this with light beer!)

The wine does not 'flavor' the meat. But it really brings out the taste of the bird. I've used malt or white wine too.

Step one, kill four grouse.  Step two cut grouse breast into 1"x1" chunks and sautee with butter.  Step three, add one large can of Dinty Moore stew and warm it to extra hot, and serve with a side of Kings hawaiian rolls and a large 3 finger deep glass of Pendletons, ice and diet sierra mist.  Step 4, relive the hunt of the day.  Damn good stuff right there.
I didn't say it was your fault, I said I was blaming you.

Grouse McNuggets    (what I told the kids when they were small)
Dice up your grouse to whatever size you like, throw in the frypan with some butter and a good dose of Johnies Seasoning. Cook as desired.
