I would take him some back so he can taste it for himself. That way he isnt just taking your word for it. Hopefully he will learn from the mistake.

I think that if he agree's its of poor quality he should probably offer up some beef/pork sausage as a replacement, but thats just my opinion.

UPDATE: Called yesterday left a message, owner called back and i told him what the issue was...he was glad to hear my feedback and said he'd be sure to let his smoker guy know. We usually take a deer to him every year if not 2 deer sometimes and he said he'd be sure to note it down for next year since we'll more than likely go to him. Hopefully that means a substantial discount.......

So for this year you are stuck with a subpar product at full price?  :bash:

Was  it summer sauage style? It sounds like there wasn't enough fat. Sometimes if it is ground to fine the smoker will cook of the fat. Not good. Or like someone already said... Smoked to long or to hot. I do a ice water bath after the smoker to cool and retain moisture. It's This problem right here what drove me to process my own, theres a learning curve but a couple years into it and were putting out a fine product. I really enjoy making my own sausage, and encourage you to at least try it. Then if it's not perfect at least you didn't pay for it :twocents:
