Home Knife/Butcher set

Looking for a set for cutting up briskets,pork butts, filleting fish, etc...I don't mind buying individually for maybe just a few that I need.  Any suggestions?

The outdoor edge kit is pretty good. I have been happy with mine. They are not to spendy and hold a edge good.

Go to Spokane Restaurant Supply.  You can get some great commercial grade blades on the cheap.

As mentioned above, commercial-grade cutlery is pretty good.
I'd buy basics, filet, paring, 8" chefs, scalloped slicer.
I like Forschner.

I like to find the old carbon steel stuff once it is sharp it stays sharp. I hit tons of yard sales scoutin.

What is your budget?  I have an old set of 4 Henckels that are amazing.  They "feel" good in my hand, and my wife likes them too.  They were very expensive 25 years ago. 

I really do like anything made by Forschner/Victornox.  They won't feel as nice, and they will probably require sharpening a bit more often, but man when they are sharp, they are REALLY sharp.  We use the little "Vickies" for steak knives, and I use them for boning animals.  I keep one in the boat and one in my truck too.  I think it's actually called a 5" paring knife, and you will see them on the raingear of every longliner or crab fisherman.  They are SCARY sharp, and really cheap, I think the last time we bought them they were $5 a piece.

We still have a set of Chicago Cutlery that we bought at Costco.  I've never liked them much.  We took them to the cabin, and I still don't like them there.  In fact, the cabin gets broke into about every third year, and nobody has stolen those dang knives!

No...you will not get good use out of Chicago Cutlery.
If anything, ask for the Henkels or other European sets at Costco.
If you don't like them, you can return them and buy what you want.

I got stuck with Chicago's.  What a disappointment!!!

I miss those Henckels.

Mossy, find Michlitch in the Spokane phone book.  They supply all the local butchers with thier tools of the trade.  I use the Forschners for all my butchering, you won't be dissapointed and they have a huge selection of different blade styles.

I know where it's at, picked up a few things for smoking awhile back.  In a rush so I didn't look the store over, I'll check it out.  Thanks
