Antelope bacon

Well last year I got to go on an antelope hunt with Ranger and we shot a lot of them. Since I am not really into steaks any longer, I ground everything to include the back straps. So now what to do with it all. This is the first project. 25 pounds of bacon. We fried some up before it cured it was pretty good. Could have a lil more flavor but that might happen once it is cured.

Dogtuk or BTKR if you see anything I am doing wrong please let me know.

I messed up and did not have wax paper or enough 9x11 pans so I improvised. The only thing I can see wrong with it is the plastic tubs are about an inch thicker than the 9x11 pans.

fifth picture - eating some a lil early.

Looks good to me the only thing i see wrong is its not on my plate LOL

I was at Costco a couple weeks ago, and although this may be helpful to you, I was rather dismayed to see Traegers at Costco for a couple hundred less than what I paid for mine last summer.  Dismayed is the cleanest word I can think of to use when I describe how I was feeling when I saw this.  I think they are selling them to Costco members at a greatly reduced price.  I wouldn't trade my Trager for the world, but would have rather paid for them what they were selling for at Costco.

I went on costco on line and searched all over, could not find anything on line at all about them being sold there. I am also interested at what costco. I have to run down to the local one today and will check there also.

Well this is not going the way I want it to. I have been smoking since 630 am, only been able to get the smoker up to 112 degrees before it started going back down to 92 degrees. Lots of wind down here so for some reason the 500.00 bradley cant withstand a lil cold wind. Glad I am not in Alaska anymore instead of just one dent in the door I would have drop kicked the POS across the yard and then ran over it for good measures.

So I have now moved everything into the oven.

I used the venison bacon from Cabelas. I smoked with apple.
