Smoked up about 25 lbs of buckboard and canadian yesterday. Triple wrapped in saran this am. I have a vaccum sealer on the way but may be a couple of weeks.
1. Can I keep this all wrapped in the fridge until then?
2. Or do I need to freeze it now, thaw then slice and pack?
How long would you think it could last under refrigeration?
I cooked the loin to 160, the bacon was about 148.
