Here’s different way to dress nachos. Works best watching football, but would work for watching political debates, the Godfather trilogy, Lifetime movies (we know those drag on for at least 6 hours), The Simpsons- whatever you enjoy plopping down on the couch to watch

Wild Game Nachos
1lb ground game (Buffalo works good but this also works well for any GAME-Y meat- made it using wild hog once, turned out GOOD)
1 can of sweet corn kernals, drained
1 large sweet onion, finely diced
1 small jar pimentos, drained
Kosher salt
Sweet Ancho chili powder (just the powder, not the salt, if you cant find it I can tell you where to buy it online)
Jalapeno powder (same as Sweet Ancho- no salt just powder)
1 can refried black beans
Toppings:
1 jalapeno, finely diced
1 jar crema espesa (Mexican table cream) OR Sour Cream, your choice
Shredded cheese (A smoked mozzarella works soooo good with game meat, but cheddar works too)
Salsa (salsa verde is my choice)
Guacamole (pre-made or make your own- if you need a guac recipe hit me up)
Blue or red corn tortilla chips
Heat refried black beans in separate container, adding a little olive oil to make the beans workable. Keep on low.
Brown diced onions and game meat, mincing as you add the meat (in other words, make the meat less clumpy). Once browned, add corn. Continue to cook until onions turn clear and corn starts to crisp slightly. Add 2-4 tablespoons (to your taste) of sweet Ancho chili powder and jalapeno chili powder and a good pinch of kosher salt. Stir and brown. Add the pimentos and remove from heat. Flavors combine for a slightly sweet, smoky and “warm” taste.
Layer the nachos how you please (I usually do meat, then beans, diced jalapenos then the rest) and reach for the remote!
