BH45- CIDER VENSION STEW ....
« on: March 15, 2012, 03:44:33 PM »
O.K Just brewed up a pot of my elk stew and I am here to tell ya it is off the chart  :o :chuckle:

1 1/2 to 2 lbs vension
2 table spoons of olive oil
3 cups apple cider
2 table spoons cider vinegar
2 teaspoons of salt
1/2 teaspoon of dried thyme
1/4 teaspoon of pepper
3 cups of chopped potateos
1 cup of chopped bell peppers
1/2 cup chopped mushrooms
1/2 cup chopped onions
2 cup of frozen peas
1 cup chopped carrots
1/2 cup chopped celery
1/4 cup flour
1/4 cup of apple cider
2 Bay leaves
1/2 teaspoon of Italian seasoning

In a skillet add 1/4 stick of butter and some olive oil ... brown meat add pepper salt .. do not drain ... dump all the juices into your crock pot... in the crock pot add your apple cider .. then dump in your meat and let simmer until it is hot ... then add all your veggies and the rest of the seasonings... let cook for about 1 hour and let it get hot ...then take your 1/4 cup of cold cider and add your flour ...mix really well ...then slowly stir into the pot ...let cook a couple hours and ENJOY ....Believe me I take my cookin seriously //// :chuckle: :chuckle:

Good heavens, that looks delicious! When I think of stew, that is what I envision. Do you think that would work w/ blacktail roast?

Supper good, she did a double batch, with some fresh baked bread. Nothing better than coming home to the smell of a good meal and believe me it smelled good. Stew in the crock pot and bread in the oven  God I love that woman! I owe a recipe to yah. I'll dig thru the family cook book and pass one on.

Sounds really good.  How many will this feed?  I'm considering making this for a meal in my elk camp this fall.  We usually have 6 to 8 guys and I want to be sure there's plenty for them.  If needed I can scale up your recipe.

A double batch was enough for me to have two big bowls, the wife one and still have a enough for me to have left overs for diner tonight (wife not included). In Elk camp, I don't know I like to eat. Especially if I've been burning up the boot leather. If your going to feed 6-8 hungry hunters I would times this recipe by 4, at least.

Thanks!  I'll follow that advice.  Having too much is much better than not having enough.  We hunt on the OP and besides putting on the miles we hunt steep ground with snow and rain most years.  Good stew when your cold, tired and hungry will really hit the spot.  Gonna need to make up a test batch here soon!   :EAT:

BH45,  I have to give you and your recipe props.  I tripled the recipe and took it to Elk camp for one of the camp dinners.  That fed 8 guys who had burned a lot of boot leather in the hills that day.  They cleaned the pot up so I would have to say it was well liked.  Recipe is a keeper for sure.

Made this for dinner tonight, very good, be prepared it a little on the sweet side.

I would make it again, but would only use 2 cups apple cider with one cup beef broth or other substitute.
