Susage stuffed & bacon wrapped pork loin
« on: April 06, 2012, 07:49:25 PM »
For Easter I'm going to bake a pork loin.  It will be stuffed with italian sausage, and then wrapped with bacon.  Has anyone ever done anything like this before?  I've see a few recipes on the internet, but not sure what I want to do exactly.  I guess my biggest question is...do I need to brown the sausage before I stuff it in the loin?  Some recipes online said to brown the sausage and others didnt.  I'm assuming it doesnt matter as long as i get the internal temp up to 150-155.  I was thinking about stuffing some pepperjack cheese in it too.  I want it to have a liitle spice to it.  Does anyone know of any good rubs, or anything that might go well.  This will be my first time doing this so I'm looking for any ideas.  Maybe I dont need to try so hard, how can sausage, bacon and pork loin possibly go bad!
