I bought a couple Landjaeger kits from PS to try in the smoker. This spice kit does 12.5lbs of meat but you need to buy casings separately. Thanks to Wea300mag and dogtuk for offering tips.

In an effort to make them fairly uniform, I cut the casings into pieces about 15 inches long. I probably stuffed them a bit too much at about ¾ full but they were able to flatten ok.



To flatten I placed them on cooking sheets, covered with butcher paper and placed another sheet on top. It was about 38 degrees in our covered patio during the day so I weighed the sheets down with a 5-gallon bucket full of apples. At night, when stacked in the fridge I put a 13lb pork butt on top.



I set them under a fan for an hour then flipped them over for another half hour.



About two hours in the smoker.



I will update later tonight as it finishes.

Looks like you know what you're doing :tup:  Landjaeger(Hunter suasage) although a long process done right is the only way to go IMO

I really need to insulate my smoker or build a new one. Finally after about 12 hours they reached an internal temp of 156 degrees.

I then placed them in a deep tub in the cold garage under a ceiling fan to cool for the night.



I took this one this morning before putting them back on the sticks in the garage.



I’d say they turned out pretty good for homemade Landjaeger. Not excellent like I buy at Oscar’s Deli but good enough to eat.

First off, it wasn't voluntary. I just could't go back to sleep.
Trust me, I would have rather stayed in bed instead of taking meat photos.
