Jerky from ground venison
« on: April 05, 2011, 07:46:22 PM »
Does anyone know how to go about making or have a recipe for making jerky from ground deer or elk? I have a Big chief smoker and want to try this.
Can't we all just get along?

I made quite a bit of it with the Hi Mountain Jerky Cure and Seasoning kits this year. . . Ground up all by the backstraps of my whitetail and after mixing it with this stuff ran it through a jerky pistol.  Turned out great.

Not a custom recipe, but you might try it out.  :dunno:

Same as above except roll it out onto a pizza pan to evenly cover the whole thing.  I just used our oven and after it was cooked I used the pizza cutter to cut it into strips however big I wanted.

I dont have a custom recipe either, but I have been using Nesco American Harvest seasonings the last couple of years, really good stuff. I like their original and cracked pepper/garlic.

Get a good press kit, and it will save you a ton of time. Just buy the pre seasoned mix, the kit will probably come with some :IBCOOL:

Let us know how it turns out, I love jerky.  I prefer is over snack sticks on a hunting trip.
