I used large coolers with dry ice. It worked pretty good, but dry ice is also expensive. I bought 2.5 gallon and 5 gallon ziplock bags that worked really nice.
I also like the idea of a portable freezer. You can wire one to hook up to a cigarette lighter, electrical outlet, battery, etc. Make sure it is small enough to be able to maneuver it into a hotel if you are going with that option. Look at putting a lock on it.
Our group shot lots of does as well. There is actually quite a bit of meat on antelope and I think the taste is fantastic. If you got some questions or need some ideas for gear needed, you can PM me.
I ended up buying the Foreverlast Tripod Game Hoist.
http://www.foreverlastonline.com/Game-Hanger-Portable-Tripod_p_16.html I wanted more portability and the option to set it up anywhere, particularly under a tarp, overhang or backyard.
If you have the money for a YETI cooler, that might be another option.
