You don't really have to hang them. My dad's cow elk last year was killed in August and we just cut it up the next day and the meat is great.
i will tell ya what wraithen, if you kill somethn let me know and i will come over and teach you how to cut up your animal, its pretty simple, elk is a little time consuming but i can cut up an elk by myself in 4 to 5 hours and that is hangn to the freezer, i live in graham so you aint to far away and doug the guy i take my meat to and i beleive huntnphool does to then all ya gotta do is chunk up what meat you want processed and put it in 20 lb bags and bring it to him, he makes awesome jalepeno cheddar summer sausage and awesome peperoni and terryaki pep, and awesome burger at a great price, he donates alot of time to challenged kids as well and he processes their meat as well, just let me know if your interested
