Just had the tenderloins and a few steak strips from the hind quarters.  Yummy...tender.  A day in the woods and couple of days in coolers as I was processing them was all the hanging I needed.  Hang any longer and you end up throwing away more dried meat.

man you dont waste anytime cuttin it up! I let mine hang for atleast a week in a cooler this time of year!  Nice job!
