Cabelas black bag sausage kits
« on: September 20, 2012, 09:35:20 PM »
Are they any good?  For $20-$25 the look to do 25lbs of meat into pep sticks, snack sticks, summer sausage, etc.  I grabbed 1 each of the pep sticks, summer sausage, and snack stick mixes with the gift card I got for returning my loud parka.  What are your thoughts?

I used cabelas jerky kits and they were ok.  I was not overly impressed and think they would be better with half the meat reccomended.  The flavor was good but weak.

I use hi country for my sausage and absolutely love it.  Best breakfast sausage I have ever eaten.

I use their country blend.

I would agree that of the packaged spices, High Country is what I like. That being said, I just made 25lbs of Italian sausage the other day using a Cabelas kit. I have used this a few times now and I really like it.

The Cabelas pepperoni kit is ho hum.

Was the pepperoni stick flavor ho hum or would a few less lbs of meat help concentrate the flavor?  Might that be the case with the 3 flavors I got as well?

Just ho hum. Not sure if less meat would help or not.
Don't get me wrong,  it is edible, just not fantastic.

Cabelas' stuff is..... :dunno:.  If you want some good spices go to www.conyeagerspice.com.  They're out of PA and are a small company.  I made Spicy Italian, Sweet Italian, Chorizo and Southern Bella Breakfast out of this years Bear.  All of it is WONDERFULL!  Last year I used their basic Breakfast Sausage mix and added one pint of real Maple Syrup :tup:It was the best breakfast sausage ever.  The Chorizo is by far the best of any mix I've used, including Cabelas and multiple online recipes.

They also have High temperature cheese for making Summer Sausage and my favorite; Bacon, Cheddar, Jalapano Bear Burgers
