I also don't bottle it.  I just keep it in a sun tea jug in a dark, cool dry room.  I like to leave it alone for about a month before I drink it also.

I have a batch brewing as we speak

Dumb question........  I am gonna put it in quart jars. Can it stay at room temp to "mello" with that much sugar?

As long as its sealed warm/hot and is full and air tight. I've done it that way.

I fill to the top of the bottle HOT then cap off with some kind of sealing cap usually plastic. The metal lids on Liqure bottles let air in and cause the bacteria to grow. I keep opend bottles after drinking session in fridge. I sometimes use half gallon juice or 2 liter bottles and getting all the way though one of those in 1 night can be quite the event.  :chuckle: the rest i just store in a dark cabnet that has a stable temp in the 60deg range.

When i make it it use 2 half gal jugs so it ends up making a few big bottles. I wouldn't have much space in the fridge if i didn't store some outside it.

Thinking I may have to do a batch....been watching and thinking. Really...could be a real cost save. Work up a batch and it should go quite a ways...

It is a cost savings. Everclear is 23-30 a half gal in OR. When we make this or Kaluaha we get  about 12 fiths from a $60 purchase and as i did the calculations its somehting like 100 proof...
