Roasted Garlic Sausage

Hello Everyone

Today I got 10 pounds of Landjager stuffed and is forming and curing in the fridge I also did 3 pounds of Apple Breakfast sausage and 10 pounds of Roasted Garlic Sausage
The Roasted Garlic is a 50/50 mix pork butt and Elk meat stuffed into 32mm Collogen casings I have never used these before and had a bit of trouble putting the casings on the stuffing horn I did not have the right size but I still got the job done
the Garlic Sausage is really god I used a pre mixed seasoning from The Sausage Maker its some good stuff everyone here likes it and the wife dont like Garlic but she ate this sausage :-) I used hickory for smoke
this Sausage is going to be great with a hunk of cheese and some redneck firecrackers while watching the Seahawks tomorrow :-)

Is your apple breakfast sausage a pre-mix or do you have a special recipe?

I used a recipe from Len Poli's website its a apple and sage breakfast sausage recipe I just modified it to my needs I used a mix of 50/50 porkbutt/Elk I passed on the sage and wine in the recipe and used applesauce instead of dried apples its pretty good

its really good stuff I also made some redneck bar fire crackers they are really good too they make a great combo with some cheese
