What do you do with a coyote after you kill it?

I have never been coyote hunting but was thinking about doing it next spring.  I have heard that you can take the pelt to a taxidermist and they will pay you for it.  I've also heard about taking the nose and the ears in as well.  Do people still do this or is it more of population control now.

I was just thinking about something my Grandpa taught me.  He said you should never kill anything that you wouldn't eat.  Anybody have any good recipes?  I'm pretty sure I have eaten dog overseas a time or two.

If you wait until they are prime you can sell them or have them tanned for wall hangings or to make useful items like mittens, hats, vesst, my wife wants a throw for the house here.  Tanning is about $20 each if they are skinned and dried.
After the first shot the rest are just noise.

 If you really want to know, scan threw that ^ tread.. Some really great answers in there.   Lets try and keep this one civil.

I myself only shoot them from Nov1-Feb 28, when there hide is good. Then give them to a friend that preps & sells the hides.
