We are getting ready to cut into them now, gonna let then inlaws try it first
just in case I screwed up! Made them for my 6 y/o b-day party, got about 10 lbs of deer in the smoker now.

you did fine just a trick to crisp up the skin smoke poultry at a higher temp then normal smoking i do mine at around 350
