Since my girlfriend has to work Christmas morning, we're having our family Christmas this evening. Instead of the traditional turkey and ham that I usually make, I decided to try something different! I bring you Traditional Christmas Venison Chili...
I'm not going to bother with quantities because I never measure anything...even when I used to be a chef I rarely measured anything...lol. I've made homemade chili in restaurants but, surprisingly, I've never made it at home.
Cubed Venison
Chopped thick peppered bacon
bottle of an Australian stout wheat beer
Kidney Beans
Black Beans
Pinto Beans
Drain all beans well
Fresh Jalepeno peppers
Fire Roasted Chipotle Red peppers
Green Bell pepper
Celery
Red Onion
Yellow Onion
Chopped Garlic
Chili Sauce
Roma Tomatoes
Chili Powder
Red pepper flakes
Cayenne pepper
Coarse black pepper
a dash or two of sugar
In a saute' pan, Saute' bacon and venison together. Add some minced garlic and minced jalepeno pepper as meat is almost done. Deglaze with stout beer.
While meat is cooking, add all beans to crock pot.
Add cooked meat to crock pot
Set aside Roma Tomatoes
Saute all vegetables, except Roma Tomatoes. Vegetables are all chopped into bite sized chunks.
As vegies are almost done, add garlic and minced jalepeno.
deglaze with more beer.
At this point, you will probably have some beer left over in the bottle...DRINK IT!
Add vegies to crock pot, along with all seasonings.
It's been simmering for about an hour or so now, started it at about 10:00AM. In another hour I'll chop the Roma Tomatoes up and add them.
This will simmer until about 4:00PM.
It's possible I missed one or two ingredients...customize as you wish!
