There's what's called 3-2-1 for spare ribs, baby backs I think 2-2-1Smoke for 3 hrs 225- 250 then sauce and wrap in tinfoil for 2 hrs finally resauce Throw back in smoker for final hour no foil helps tightening them up. Tender fall of the bone

Tender fall of the boneI think I might want to try this method but I'm a little confused about the "2". What do you do for those 2 hours, put them back in the smoker or the oven or?
pork ribs are fickle, sometimes they are tender sometimes not, so i guarantee them... i boil mine for 30 minutes them grill low for 2 hrs so i know they will fall off the bone every time
