I'm a do it yourself er with wild game, but i raised 3 hogs last year and took them to 3 different butchers. the first guy did a great job, but he's outta business now. the second hog" the biggest" i took to Silvana, NEVER AGAIN!!  i got back 30#'s less meat then the first hog," the first hog was visible smaller" and the didn't cut up my ham's. the third went to Del fox, he's my butcher now. great cut's and all my meat back.

If you are from Seattle and you are with the meat when it drops, then you are the best Butcher in Seattle, if you bone it and cool it immediately after it drops.  Just take it off the bone and hide where it drops in any fashion and cool it in the shade.  Then any Cutter in Seattle can make it look nice, but you made it taste nice.  You don't want that meat to taste like good looking date who doesn't brush their teeth do you?  Well, maybe your date can't help it because it's your deer meat you smell on her breath after dinner.  Don't take it personal.  I really don't know what your meat smells like.

If you feel like making a drive a friend of mine does all our animals, cut, double wrapped, labeled, burger, summer sausage, breakfast sausage, jerky, pepperoni etc. He is a butcher by trade for a grocery company but has a nice setup at home to do it, and he is very reasonable. He uses the money to pay for his hunting trips, a little extra cash on the side. Like I said, a bit of a drive from Seattle but should anyone in the south end need a good butcher he is in south Puyallup area.

I would really like more info. I work in Puyallup and live in Gig harbor, so sounds like you buddy is close to me. I would really like to get more info.

there is a very very good shop down by GROUND MOUND  .  the smoke shop very very good not to expensive.
