I've marinated for 24-48 hours with great results. You might want to think about picking some blackberries and making pepper jelly with all those peppers and using that as a marinade....so delicious
. I usually do crockpot if it's a big roast for 8 hours, otherwise hot and quick on the stovetop with the backstraps and smaller steaks.
