Corn it! Morton's has the recipe on their site. Just don't let it sit as long in the salt.

Season with Montreal Steak, wrap with bacon, and grill it whole on a low BBQ, coals if possible.

I made it the way I said previously and it was delicious though I agree I did way more than needed and it took away from the natural flavor. I also cooked it a tad too long. Seared it on all sides on the bbq and finished in the oven for a few minutes. I cut the end off to make it a well shaped pocket so I have enough to cook a couple medallions for myself tomorrow  :drool: gonna seaon, sear, and call it macaroni

Well, lately we have done the following with a whole tenderloin and it was spectacular.

Butterfly the length of the tenderloin. Spread whole container of onion chive cream cheese. We added some fresh green chile on the inside as well. Roll it back up and wrap in a bacon weave and then smoke/BBQ to an internal temp of 140. Let stand and slice.  OMG! :tup:

This is a great thread!   Thawed out one of our elk loins from this year and BBQ it just as RadSav said. Did put a light rubb on it. Some off the wall brand we had in the cupboard? Cabelas I think? Seared all sides then low heat until approximately 120 deg. Wrapped in foil and let sit. Will do this again and again and again!!!!!
Slap some bacon on a biscut and lets go, were burrnin daylight!

One of our favs is to rub it with pepper coarse salt a large amount of fresh garlic wrap it up with bacon and cook it in a cast iron pan on med heat when the bacon is done internal temp will be 120ish 5 min sit and eat

ps i do the same prep with tip roasts but then throw them on the green mountain @ 200 till 135
